These pepper jack bacon balls are a great snack to serve as an amuse bouche, appetizer or finger food at any cocktail party or outdoor event.

They are quick and easy to make, and will also taste great when dipped in your favorite dipping sauce.

You can also secure more than just bacon pieces on top of the balls, some suitable alternatives would be an olive, a slice of cheese or you could add a dollop of dip and top that off with a  tiny slice of tomato or chilled cucumber.

  1. Crumble 12 of the bacon strips.
  2. In a large bowl mix the crumbled bacon, potatoes, cheese, eggs, paprika, salt, pepper, sour cream, onion powder and garlic powder.
  3. Using a melon ball scoop, shape mixture into balls, roll them in the breadcrumbs and then place them on a baking sheet that is lined with parchment paper.
  4. Chill in the refrigerator for several hours.
  5. Drizzle butter over the balls and then bake in oven set at 375° until golden brown.
  6. Place a small piece of the leftover bacon strips on top of each ball and secure with a toothpick. Serve and enjoy!
