This is a very easy recipe to whip up, and makes a very healthy snack that even children are sure to love!

When served as an amuse bouche, place a cucumber slice on a very small platter and add a dollop of dip on top with a tiny sprig of mint or pinch of lemon zest.

This is best served immediately so that it stays refreshingly cool and tasty.  If the cucumbers slices gets warm, then they will taste rather bland.

This recipe also makes a rather unique and tasty alternative for salads, simply layer a leaf of lettuce, a slice of tomato, a cucumber slice then the dollop of dip.  Sprinkle some apple cider vinegar over the salad for a quick, cool & refreshing light lunch!

  1. In a large bowl, mix everything together except the cucumbers.
  2. Place the whole cucumbers and bowl of dip in the refrigerator for 3 hours to chill thoroughly.
  3. Slice the cucumbers, arrange in a circle on a platter, place dip on platter in the middle, serve while still cold.
