  1. In a large Wok, saute all of the ingredients except the wraps, for about 10 minutes on medium heat.
  2. Place the filling in the wraps, while placing two shrimp in each wrap (one with a tail one without). Be sure that the one with a tail sticks out decoratively as shown in the image.
  3. To fill and fold, place 1 tablespoon of the mixture in the middle of the wrap. spread it out to form a "log". Fold the bottom of the wrapper over the filling, rolling tightly to keep it firm. Fold the sides over, then roll into the wrap. It is at this point you will want to place the shrimp with the tail into the wrapper, so that it can be secured as you roll it up.
  4. Fill a cast iron skillet about halfway with oil, heat to 375 degrees, then fry the wraps in the oil, turning as each side browns.
